【摘要】:ThisInternationalStandardspecifiessamplingmethodsforthedetectionandenumerationofmicroorganismsonthecarcasssurfaceoffreshlyslaughtered(red)meatanimals.Themicrobiologicalsamplingcanbecarriedoutaspartof—theprocesscontrol(andtoverifyprocesscontrol)inslaughterestablishmentsforcattle,horses,pigs,sheep,goatsandgameraisedincaptivity,—risk-basedassurancesystemsforproductsafety,and—surveillanceprogrammesfortheprevalenceofpathogenicmicroorganisms.ThisInternationalStandardincludestheuseofdestructiveandnon-destructivetechniquesdependingonthereasonforthesamplecollection.Itdoesnotconsidertheuseofsamplingplans.Whennationallegislationonthetopicexists,thisprevailsoverthisInternationalStandard.AnnexAshowssamplingsitesonthecarcass,andAnnexBgivesrequirementsformicrobiologicalexamination.AnnexCcomparesdestructiveandnon-destructivemethods.
